We have embarked on a journey into the wine‐making past, from which we return with aromas and flavours full of the future: recovering age-old winemaking processes,in which must and skins are fermented together and then macerated for nine months in clay pots, which, as a result of ceramics’ oxidative ageing, give the wine an intense color.
